Fujita skewers with chimichurri sauce:

If you Love tofu, then you have to try this recipe. This is one of the vegan yummy and tasty recipes. So, let's start with ingredients

Ingredients:

• For the tofu and veggie seasoning:
• 2 tsp of chili powder
• 1 tsp of cumin
• 1/2 tsp of dried oregano
• 1/2 tsp of garlic powder
• 1/4 tsp of onion powder
• 1/2 tsp of pink Himalayan salt
• 1/2 tsp of black pepper
• Sprinkle with cayenne
• 2 tbs of grapeseed oil
• 14 oz of cubed firm tofu (if you're on team hate for tofu we recommend switching with seitan or mushrooms)
• 1/2 of a yellow bell pepper cut into large pieces
• 1/2 of a green bell pepper cut into large pieces
• 1/2 of a red bell pepper cut into large pieces
• 1/2 of a red onion pepper cut into large pieces

For the chimichurri sauce:

• 1/4 cup of fresh cilantro
• 1/4 cup of fresh parsley
• 1 sprig of green onion
• 1 clove of garlic
• Juice of one lime
• 3 tbs of grapeseed oil
• 1 tbs of apple cider vinegar
• Sprinkle of cayenne

Cooking Directions:

1. In a large bowl combine all seasonings well and add oil. Stir well and add tofu and veggies. With your hands gently toss vegetables and tofu in bowl until all components are well coated in marinade. Set aside.

2. Preheat oven to 400°F. In a food processor combine all ingredients for chimichurri sauce. Blend until smooth and set aside.

3. Begin to assemble skewers with veggies followed by tofu. Repeat process until finished. Place skewers onto parchment paper on a baking sheet and bakes for 20 minutes each side.

4. Once time is up removed from oven and transfer to a large plate. Garnish with freshly squeezed lime, chimichurri sauce, and fresh cilantro. Enjoy!

This made 4 unbelievably good skewers. These are also great wrapped in a tortilla with fresh greens and tomatoes.

Chocolate & Peppermint Cupcakes

Another fantastic recipe I love. And cupcake has always been my favorite. This cupcake you can prepare it very quickly. As it might take 30 minutes or less to prepare it. So, let’s get started with the cupcake recipe.

Ingredients:
• 420-gram plain flour (all-purpose flour)
• 400-gram caster sugar
• 75-gram Cacao powder
• 2 teaspoon Bicarb of Soda
• 500 ml water
• 190 ml Olive oil
• 2 Tablespoon Balsamic Vinegar
• 6 drops peppermint essential oil or teaspoon peppermint essence

Cooking Instruction:

1. Preheat oven to 180 degrees fan forced oven
2. Put cupcake wrappers in the cupcake tin
3. Mix dry ingredients and sift
4. Mix wet ingredients together
5. Combine dry and wet ingredients and mix thoroughly for two minutes
6. Be warned mixture will be very wet – most straightforward to have a jug to pour into cases
7. Bake for 10 – 15 minutes until a skewer comes out clean.
